Why This Recipe Caught My Eye

I am a big fan of Olga Massov and Sanaë Lemoine’s book Hot Sheet: Sweet and Savory Sheet Pan Recipes for Every Day and Celebrations. And let’s be honest, I am a huge sheet pan meal enthusiast. With a family of 5 (three being teenage boys that consume massive quantities of food) the easier the cleanup, the easier my life!

This recipe for scallion and cheddar tart with honey is not something I would typically make. But as I was flipping through the cookbook, the photo for this recipe was just so pretty that it stopped me in my trackes and made me want to try it! This tart is perfect for a brunch, to impress your friends with an unusual and super tasty hors d’oeuvres, or even for Easter Sunday (if you celebrate).

My Experience Making It

This recipe is just a lot of fun!

There’s something oddly satisfying about sprinkling the sesame seeds, punching down the puff pastry after it bakes, and watching those copious amounts of cheese melt to perfection.

The majority of time is spent waiting for the pastry to bake. Otherwise, there’s not a lot of prep involved to get such a pretty and tasty result!

What Makes This Recipe Special

For this recipe I used the Cabot Creamery Vermont Seriously Sharp Cheddar and it was seriously delicious (see what I did there?). When my husband tasted the tart, the first thing he mentioned was how delicious the cheddar was. I could see this recipe being delicious with Trader Joe’s Unexpected Cheddar or even a mix of cheddar with another cheese — could you do a gruyere? I’m definitely curious to experiment!

The scallions have a sharp oniony flavor that stand up well to the buttery flakiness of the puff pastry and the sharpness of the cheddar keeps everything bright and balanced.

It makes a rich, delicious bite that would definitely be a hit at any gathering. The drizzle of honey adds just the right touch of sweetness to complement the savory elements.

The Cookbook Behind the Recipe

As I mentioned above, I adore this cookbook. It has a lot of unique ideas for cooking with a sheet pan, from granola, to “stir fry”, to dessert. If you’re looking to simplify cleanup while still creating impressive dishes (which, in this phase of my life, is basically my life mission), this cookbook deserves a spot on your shelf.
